Keep food safe in bulk cooking, event and off-site catering: control cooking, cooling and hot or cold holding, protect food during transport and maintain strong catering hygiene at every venue.
The Food Safety in Catering Operations course in Doha, Qatar addresses the particular risks of producing food in large quantities and serving it away from the kitchen. Bulk cooking, rapid cooling, reheating, transport in hot weather and service at temporary venues all create opportunities for bacteria to grow or for food to become contaminated. The course shows how caterers plan production, control temperatures from kitchen to guest and maintain catering hygiene at banquets, events and off-site locations.
Training is built around realistic catering scenarios, including a large wedding buffet, a corporate event, staff meal production and a remote site service. Participants plan a production schedule, set holding and transport controls, design a cleaning and sanitation plan for a temporary venue and review an outbreak case linked to poor cooling. Leaders Training Center can deliver the course as an in-house program for catering companies, hotels and central kitchens, using their menus and logistics.
By the end of this course, participants will be able to:
Plan bulk production to reduce time food spends in the temperature danger zone.
Control cooking, rapid cooling and reheating of large batches safely.
Maintain hot holding at 63°C or above and cold holding at 0–5°C during transport.

Catering is a large part of Qatar's food sector, serving hotels and banquets, airlines, hospitals, schools, labor accommodation and major sporting and cultural events. Food is often cooked centrally and transported across the city in high outdoor temperatures, which makes cooling, holding and transport controls critical. Strong catering hygiene helps operators meet the food safety expectations of the Ministry of Public Health and serve large audiences safely.
